In particular, their ABCs of Successful Crêpes gives a good description of the basic recipe.
A key point is to make the mixture well in advance so that you can cover it and let it stand for a couple of hours. Always use butter to cook them and our preference is to use full cream milk for the batter with four eggs to 250 g of flour (8 oz).
Worldwide Gourmet suggests numerous fillings and sauces but I don't think you can beat freshly squeezed lemon juice and a sprinkling of sugar;
the rum sounds interesting but I don't see setting fire to it!
